Monocultivar extra virgin olive oil "Tonda Iblea" a very ancient variety with dual purpose and self-sterile that produces highly prized and fragrant oil. With intense aromas of unripe tomato, freshly cut grass and a hint of artichoke. It is delicate, round. Non-invasive, it lends itself to many preparations and many great chefs use it in the kitchen for this very reason. The yellow-green colour, recalls the sunny expanses of the Ibleo plateau, the taste is moderately spicy while the acidity often does not reach 0.1%. The oil comes entirely from parcel no. 34 of cadastral map sheet no. 76. The only non-irrigated area of the farm. It is a real cru. It can be sold with organic certification.
